Pao
Bhaji
This is very
common dish in Tamil Nadu. Its easy, healthy and delicious. There are so
many varieties in this dish. Each family prepares it in their way, even
though the basic ingredients are the same, they make few changes in
preparation.

| Paobhaji
Masala (available in the market) |
Two or three teaspoon |
| Green
chilies |

| A
handful of coriander leaves |
Method:
Mash the boiled potatoes and
knead them well.
Cut all the vegetables into
small pieces. Grate the carrots.

Boil all the vegetables adding
little bit of salt.
Heat butter in the pan , add
ginger-garlic paste and fry.
Add cut onions and again fry.
Then mince the tomatoes in a
mixer and add to it and fry for two minutes. Then add Paobhaji Masala.
Simmer it for two minutes.
Then add smashed potatoes and boiled vegetables (with the water).

Mix well with the back of a
ladle. Add salt to taste. Garnish with coriander leaves and green chilies.
Serve hot with pao or bread.
